I first discovered okra when my husband and I were travelling around the world and a lovely lady made this recipe for us. It has been a family favortie ever since. It is so simple to make and freezes very well.

1 onion diced

1 pinch of salt

1lb okra

1 hot pepper (optional)

1 T lemon juice

You are going to love this recipe, a twist on another British classic, I started adding ingredients to it when as a newlywed (to an American with a hearty appetite) I would make the original recipe and my husband would be horrified that I considered a dish without meat to be a meal.  Hence, I added bacon and ‘another veg’ to bulk it out a bit.

This recipe is amazing! I do love good chicken salad, sweet but not too sweet, and this is a really good one.

 

Ingredients:

Oven roasted chicken( meat taken off the bone), I use about four cups for this recipe

1/2 cup Mayonnaise

1/2 cup ricotta

1T red wine vinegar

1T grainy mustard

S&P (maybe skip if your chicken is highly seasoned)

Onion (I used green onion, could use red or sweet just cut up small)
